Im quite sure it is possible.
Even though, Ive never tried it out.
Lemme make a test script of this and come back to you with answers.

After Checking this out.
Trying to do this and talking to servel modders, I believe this cannot be done.

Jimmy fighting style was only made for the player. NPC can't use it.

i tried this awhileeee ago and i managed to make the ped block the way jimmy does, but nothing more :/

Try changing his AI to another ped's. If it doesn't work I don't know how you would.

Why would it override the discussion? A ped stands for pedestrian/civilian/person. It can include the player, and any NPCs. In Bully's case the punching bag in the prep's gym is also a ped just so it has a health bar and can be locked onto. Because only peds can be locked onto in Bully.
