You should check Deapool's Bullies Nightmare mod, cause in his mod, there's a part, where you must sneak through the prefect and if they spot you, you will be kicked out
And regarding making a custom ped patrols, I have no idea about this, the prefects, teachers & cops has their own patrol path and R* save their patrol path inside the trigger.img

BTW, great mod, and this mod reminds me of the old supermod, but this mod has some different features and this mod table actually really neat
